Comparison between Agave and Chicory Inuline

06/26/2009

Question:

good afternoon,

I would like to have (know) what are the major difference between Agave And Chicory Inulin, if you have a chart that would be great. I would like to add to my beverages, witch one would be the best and wy?

many thanks

Answer:

Agave inulin and chicory inulin are very similar. Like other inulins, they are a source of soluble dietary fiber that may help lower cholesterol and triglycerides. They may function as a prebiotic by helping to support the growth of "friendly" bacteria in the large intestine. So, inulin in the diet may improve calcium absorption in the body. Agave and chicory inulins are very soluble in cold or hot water. They provide 1.5 calories/gram. They both work well for clear beverages, smoothies, yogurts, and other highly moist products. Agave inulin is ideal for beverage use. Chicory root inulin has a slightly longer chain (more fructose units), which may make it less soluble but provide more fiber and structure to a product, making it ideal for baked goods and crackers.
